Sometimes, I come up with random ideas I want to try when it comes to cooking. For some reason, I am always confident that whatever it is I am trying to do will work out somehow.

The other day, I decided I was going to be laid back about my cooking and while I did that, I came up with this recipe that works for those days when you really don’t feel like spending too long in the kitchen or maybe you don’t even want to be in the kitchen at all!

I assure you, everyone will love this recipe. Everyone can try this and get it right! It is also fun to try with kids who want to help in the kitchen. As strange as this might sound, this is the method I am going to use from now on when it comes to a rack of pork loin!

Ingredients

A pack of pork rack of loin ribs (If you don’t eat pork for whatever reason you can substitute with beef or lamb) I am sure it will work fine too!

Ground black pepper

Classic BBQ seasoning

Parsley

Hot Piri Piri seasoning

HP Honey BBQ sauce

Hoisin Sauce

Jack Daniels smooth original BBQ Sauce (Substitute with any other type of BBQ sauce of your choice if making for young children)

Honey (2tbs)

As you might have noticed, I just listed what you will need without telling you the quantity!  That’s where the fun comes in.

Oven baked sweet potato fries by simply recipes

 

2 pounds sweet potatoes, about 3 large ones

1/4 cup olive or other vegetable oil

1-2 Tbsp sugar

1 Tbsp salt

1-2 Tbsp spice or spice combination of your choice: chipotle powder, smoked paprika, Chinese five-spice, pumpkin pie spice, garam masala, Cajun seasoning, etc.

 

Method

1. Get a clean plastic bag (one you might have gotten when you went food shopping) or a clear zip lock bag (that’s what I used)

2. Using a small kitchen knife, put some holes in the ribs (This is so the marinade sets in well)

3. Put the ribs in the bag of your choice

4. Make sure you have all your seasoning out and ready to go!

5. Once you have placed the ribs into the bag

6. One at a time, pour in a dash of each seasoning, counting up to 10 seconds each time before you stop (Ground black pepper, BBQ seasoning, Parsley, Hot Piri Piri

7. Do the same for the sauces, this time, counting up till 5 seconds before you stop (this is because the sauces will pour out much quicker)

8. Add about 2 tablespoons of honey

9. Now, tightly seal your bag and then shake everything together as well as you possibly can, to get all the seasoning in properly, keep shaking the bag until you feel confident enough to stop!

1o. Make sure you have all the marinade spread out evenly!

11. Leave in the fridge for about 30 minutes – 1 hour (depending on how much time you have)

12. If you are only doing this for 30 minutes (Preheat your oven to about 190 degrees C immediately. If you are doing this for an hour, preheat your oven before the final 30 minutes

13. Place your ribs on an oven tray on top of some foil paper and cook for about half an hour, flipping them round after 15 minutes.

14. When you flip them round you can spread some more honey on them to glaze.

And that’s it! You have made some very tasty ribs easily!

You can serve these with any side dish of your choice. If you want to make this is a great meal overall, I found a recipe for some sweet potato fries, which are quite easy to make and go nicely with the ribs

 

Oven baked sweet potato fries by simply recipes

1. Preheat oven to 450°F. (For more crispiness, preheat your oven to 500°F.)

2. Peel the sweet potatoes and cut off the ends. Cut the potatoes in half lengthwise and then, if they are very long, in half crosswise. Cut each piece into wedges.

3. Put the sweet potatoes into a large bowl and add the oil. Mix well to combine. Sprinkle with salt, sugar and spices of your choice. Use your hands to mix well, so all pieces are coated with oil and spices.

4. Spread the sweet potatoes out in a single layer on a baking sheet; the oil they are coated with should keep them from sticking to the pan. If you are trying to cut fat, reduce the oil to 2 tbsp and use a non-stick coating on the baking sheet.

5. Bake for a total of 25 to 30 minutes. After the first 15 minutes, remove the baking sheet from the oven and turn over all of the sweet potato pieces. Return to the oven and bake for another 10-15 minutes, or until they are well browned. Let cool for 5 minutes before serving.
