I think chicken legs are one of the easiest things to make! There are so many different and exciting ways to cook them and there are a lot of different flavors you can go for. If you know the kind of taste or cuisine you are after, you can immediately start thinking of some ingredients you can use.

I’ll give you some tips!

Asian marinade ingredients include- soy sauce, lemongrass, rice-wine vinegar, ginger and mirin.

Mediterranean marinade ingredients include- lemon juice, thyme, basil and honey.

American marinade ingredients include- buttermilk, sugar and Worcestershire sauce.

You get the idea! This makes it a lot easier to try different recipes depending on what you feel like at the time. This is just one of many I will be sharing with you.

Ingredients

1/4 cup chopped cilantro (coriander)

2 tablespoons Asian fish sauce

1 1/2 teaspoons freshly ground pepper

4 whole chicken legs, (skinned)- optional

1 tablespoon chicken seasoning

1 teaspoon salt

2 tablespoons fresh lime juice

Method

MARINATE THE CHICKEN – I usually like to use a fork to poke holes in the chicken so the marinade absorbs better. I would suggest you try this; it works for me every time!

Put your chicken legs in a plastic bag and put all the ingredients in the plastic bag. Using your hands (you can wear cooking gloves if you don’t like the idea of using your bare hands) evenly spread the marinade all over the chicken for about 2 minutes and mix all the ingredients in properly. After this is done, shake the bag with the chicken in it for about another 2 minutes to make it soak in. This makes it taste even more delicious!  Leave to absorb for about 30 minutes.

Preheat the oven to 400° F/204 C. Light a grill. Rub the chicken with the oil and rub the grill with an oiled paper towel. Grill the chicken over moderately high heat, turning, until charred, for about 10 minutes. Transfer the chicken to a baking sheet and roast for 30 minutes, until cooked.

Serve with rice of your choice
